This is a very creamy pasta sauce. First I made it with Tahini, but I didn’t like the flavour. Tahini is ground RAW Sesame Seeds, and I like ground TOASTED Sesame Seeds, that is called ‘Nerigoma’ in Japanese. As such a special ingredient is not available where I live, I simply toasted Sesame Seeds and ground them until smooth. Enjoy with plenty of chopped Parsley and salty Olives.

Ingredients
2 tablespoons Toasted Sesame Seeds
2 tablespoons Pine Nuts
1/2 teaspoon Grated Garlic
1 teaspoon Lemon Juice
1 to 2 teaspoons Olive Oil
1 tablespoon Grated Parmesan Cheese
Salt & Freshly Ground Black Pepper
1 serving Spaghetti
Parsley Leaves
Pickled Olives
Method
- Toast Pine Nuts until golden. Grind Toasted Sesame Seeds until smooth, add toasted Pine Nuts and grind well.
- Add Garlic, Lemon Juice and Olive Oil, and mix well. Add grated Parmesan Cheese and season with Salt and Pepper.
- Meanwhile, cook Spaghetti according to the instruction. Add to the sauce with some cooking water as well, and gently toss until well combined.
- Enjoy with plenty of chopped Parsley and salty Olives.
