This is a very creamy pasta sauce. First I made it with Tahini, but I didn’t like the flavour. Tahini is ground RAW Sesame Seeds, and I like ground TOASTED Sesame Seeds, that is called ‘Nerigoma’ in Japanese. As such a special ingredient is not available where I live, I simply toasted Sesame Seeds and ground them until smooth. Enjoy with plenty of chopped Parsley and salty Olives.

1 Serving

2 tablespoons Toasted Sesame Seeds
2 tablespoons Pine Nuts
1/2 teaspoon Grated Garlic
1 teaspoon Lemon Juice
1 to 2 teaspoons Olive Oil
1 tablespoon Grated Parmesan Cheese
Salt & Freshly Ground Black Pepper
1 serving Spaghetti
Parsley Leaves
Pickled Olives

  1. Toast Pine Nuts until golden. Grind Toasted Sesame Seeds until smooth, add toasted Pine Nuts and grind well.
  2. Add Garlic, Lemon Juice and Olive Oil, and mix well. Add grated Parmesan Cheese and season with Salt and Pepper.
  3. Meanwhile, cook Spaghetti according to the instruction. Add to the sauce with some cooking water as well, and gently toss until well combined.
  4. Enjoy with plenty of chopped Parsley and salty Olives.
