I often bake Cinnamon Crumble. Just Cinnamon Crumble only, without fruit OR cake. Then I realised it is the same thing as Shortbread which is made with Butter, Sugar and Flour. I stared adding other Spices to Cinnamon Crumble dough, and using Brown Sugar instead of White Sugar. The yummy Spiced Crumbles are transformed into these yummy Spiced Biscuits.

Makes

24 Biscuits

Ingredients

125g Regular Salted Butter *softened
1/3 cup Brown Sugar *firmly packed, I used Dark Brown Sugar
1/4 teaspoon Salt
1-2 teaspoons Ground Cinnamon
1 teaspoon mix of Ground Allspice, Nutmeg, Cardamon OR Cloves
1 cup & 2 tablespoons Plain Flour

Method
  1. Mix softened Butter, Brown Sugar and Salt in a mixing bowl until creamy. Add Spices and mix to combine. Add Plain Flour and mix well. Use your hands to bring the dough together in the bowl.
  2. *Note: If the dough is too soft to roll out, leave it in the fridge until firmed up.
  3. Preheat oven to 160℃. Line a baking tray with baking paper.
  4. Roll out the dough on a floured surface until 5-6mm thick and cut into shapes. Place on the prepared tray and bake for 20 to 25 minutes or until nicely browned. Set aside on the tray for 10 minutes to cool before transferring to a wire rack to cool completely.
