My family’s favourite Spinach dish is definitely ‘Goma-ae Spinach’, however it contains a fair amount of Soy Sauce. I am trying to reduce Salt intake because of my husband’s health issue. Today I used Japanese Mayonnaise to seasoned it and I added only 1 teaspoon Soy Sauce to this dish. It was salty enough for us.

Makes

2 Servings

Ingredients

1/2 bunch Spinach *200g after blanched and squeezed
1 tablespoon Toasted Sesame Seeds *ground
1 teaspoon Soy Sauce
1/2 teaspoon Sugar
1/4 cup Corn Kernels *frozen is OK
1 can (95g) Tuna *drained, I used Tuna in Springwater
2 tablespoons Japanese Mayonnaise
1/2 teaspoon Rice Vinegar

Method
  1. Wash Spinach and blanch in boiling water. Dip in cold water to stop cooking further, drain well and squeeze to remove excess water. *Note: Today the Spinach weighed about 200g after squeezed.
  2. Cut into 3-4cm in length and place in a mixing bowl. Add ground Toasted Sesame Seeds, Soy Sauce and Sugar, and mix well.
  3. Add all other ingredients, and mix to combine. Taste the flavour. You may wish to add extra Soy Sauce.
