On the other day, when I was preparing spinach for ‘Goma-ae’, I recalled my very first cooking class in the fifth grade. We cooked ‘Sautéed Spinach’ and ‘Boiled Eggs’. The memory inspired me to create this gratin. A very simple, yet yummy and nutritious dish for a family.

Ingredients
Spinach 1 bunch *200 to 300g
Soft-boiled Eggs 4 *cut in half each
Onion 1 *sliced
Bacon 2 to 4 slices *cut to 1cm pieces
Oil 1/2 tablespoon
Butter 25g
Plain Flour 25g *2 & 1/2 tablespoons
Milk 1 cup
Salt & Pepper
Grated Tasty Cheese 1/2 cup
Method
- Preheat oven to 200°C.
- Make white sauce. Melt Butter in a saucepan and stir in Flour. Cook for a few minutes over medium heat. Pour in Milk and bring to the boil, stirring constantly and simmer until the sauce thickens. Season with Salt & Pepper to taste.
- Wash Spinach well and place in a microwave-safe bowl. Microwave, covered, for 1 to 2 minutes or until Spinach has just wilted. Drain, cool and remove excess liquid. *Alternatively you can cook Spinach with Onion & Bacon.
- Heat Oil in a large frying pan over medium to high heat, cook Onion and Bacon. If you cook Spinach with them, add Spinach after Onion is softened, and cook only until Spinach is wilted. Remove excess liquid. Season with Salt & Pepper if you like.
- Combine the vegetables and White Sauce, place the mixture in a baking dish. Arrange the Eggs on top, sprinkle with Cheese. Bake for 15 to 20 minutes or until golden.
