I wanted to used up the leftover Hummus and made it into a salad dressing. Then I dressed Baby Spinach with the Hummus Dressing. For a colour, I also added Carrot. The salad was not bad, but it was lacking something. And the something was Onion!!! If you are not a fan of fresh Onion, try it. Onion tastes great with Hummus Dressing.


Makes

2 to 3 Servings

Ingredients

80 to 100g Baby Spinach
1/8 Red Onion *thinly sliced
1/2 Carrot *cut into thin strips

Hummus Dressing
4 tablespoons Hummus
1 tablespoon Oil *e.g. Olive Oil, Sunflower Oil, etc.
1/2 tablespoon White Wine Vinegar OR Lemon Juice *OR Vinegar of your choice
1-2 pinches Salt

Method
  1. Combine all the Dressing ingredients in a mixing bowl. Alter the amount of Salt to suit your taste. *Note: You can add a small amount of Cold Water to thin the dressing if you want to do so.
  2. Add all Vegetables and mix to combine.
