There is a very popular Japanese sweet called ‘Ichigo Daifuku’ (Strawberry Daifuku Mochi). I crave it sometimes, however, it is not easy to find in stores where I live. I have to make it if I want to eat it. This is a quick and easy alternative to it. Mochi part is cooked like pancakes. You only need a non-stick frying pan.

Ingredients

1/2 cup (about 70g) Glutinous Rice Flour

1/4 cup (about 40g) Plain Flour
1 tablespoon Caster Sugar
150ml Water
Oil for cooking
Sweet Azuki Paste *Koshi-an OR Tsubu-an *about 20g each
Strawberries

Method
  1. Use a whisk to combine Glutinous Rice Flour, Plain Flour and Sugar in a mixing bowl, add Water and mix well. If it turned too runny, add extra Plain Flour.
  2. Heat a non-stick frying pan. When it is hot, reduce heat to low. Thinly oil it.
  3. Pour in 2 tablespoons batter and make a oblong pancake. (e.g. 5cm x 13cm) Try not to brown it. As soon as the bottom is cooked and hard enough, flip it over. When it is cooked, place on a plate and let it cool. Continue cooking with the remaining batter. *Note: The pancakes are very sticky. Do not stack them.
  4. Place some Sweet Azuki Paste and Strawberry (cut in half if large) on each pancake, and wrap OR roll up nicely.
