This dish is very similar to my ‘Stewed Azuki (Red Beans)’, but I added Bacon and I cooked Azuki separately. If you use canned Azuki (Red Beans), it would be super quick and easy to cook. It can be served as a side dish OR you can eat it with Rice.

3 to 4 Servings

Ingredients

1 cup Dry Azuki (Red Beans)
*Note: Canned Azuki can be used. You would need about 300g (about 1 & 1/2 cups) cooked Azuki
1 Onion *finely chopped
1 clove Garlic *finely chopped
100g Bacon *cut into small pieces
1 tablespoon Olive Oil *OR Oil of your choice
1 teaspoon Cumin *OR your favourite Spice OR Herb
Ground Pepper OR Chilli as required
1 cup Chicken Stock *OR Stock of your choice
2 tablespoons Tomato Paste
Salt
Finely chopped Parsley

Method
  1. Rinse Azuki (Red Beans) and cook in plenty of water for 30 minutes OR until firmly cooked. When cooked, leave it in the water. *Note: If you use Canned Azuki, drain and rinse.
  2. Heat Oil in a frying pan over medium heat, cook Bacon until slightly browned, add Onion and Garlic, and stir.
  3. When Onion is softened, add Spices, stir to combine, then add Chicken Stock, Tomato Paste and drained Azuki, and gently mix.
  4. Cook, occasionally stirring, until the sauce is thickened OR almost gone. Taste it and add some Salt as required. Sprinkle with chopped Parsley, and serve as a side dish OR you can enjoy it with Rice.
