I am writing this recipe for my children, so they can cook it by themselves. I frequently cook this Chicken, because it is easy and delicious. There are many authentic Portuguese Chicken recipes that require a variety of Spices and Herbs. I use Portuguese Chicken Spice Blend and Garlic Salt to season, sometimes I add a little bit of Lemon Juice. You can pan-fry it OR bake it in oven.

Ingredients

800g Chicken Thigh Fillets
2 tablespoons Lemon Juice
2 teaspoons Garlic Salt *alter to suit your taste
Ground Black Pepper
2 to 3 teaspoons Portuguese Chicken Spice Blend
*Note: The Spice Blend that I use contains Paprika, Chilli, Oregano and Lemon
1/4 cup Plain Flour *optional, but recommended if you pan-fry
Oil for cooking *optional

Method
  1. Place Chicken Fillets in a large bowl, add Lemon Juice, sprinkle with Garlic Salt, Black Pepper and Portuguese Chicken Spice Blend, combine well, and set aside while you are preparing other dishes to serve with the Chicken.
  2. Drain the liquid and coat the Chicken with Flour. *Note: Flour is optional, but highly recommended if you pan-fry the Chicken as the Flour coating significantly reduces the splatter.
  3. Heat a small amount of Oil in a large frying pan, thick-base preferred, over medium heat, and cook until nicely browned and cooked through. OR you can bake in the oven at 220℃ for 15 to 20 minutes. *Note: The Chicken in the above photo is baked.
