This is a life saving dish that can be prepared quickly and absolutely easily, yet it is delicious. What you have to do is to place everything in a large frying pan OR pot and cook until the sauce thickens. You don’t need to do anything really. While Chicken is cooking, you can do other thing. A lot of Vinegar is used but it is necessary. DO NOT reduce the amount.

800g Chicken Thigh Fillets *cut into chunky bite-size pieces
1 Spring Onion *optional, finely chopped

1 clove Garlic *finely chopped
1 small piece Ginger *cut into fine strips OR grated
1/2 teaspoon Chilli Flakes *OR Toban Djan (Chilli Bean Sauce) as required
1/4 cup Soy Sauce
1/4 cup Rice Vinegar
1/4 cup Water

  1. Place all the Sauce ingredients in a large frying pan OR pot, and bring to the boil over medium high heat.
  2. Add Chicken pieces to the simmering sauce, cover with a lid, and cook for 10 minutes. Remove the lid, turn over the Chicken pieces so that both sides can be cooked evenly. Keep cooking until the sauce thickens.
  3. Sprinkle with finely chopped Spring Onion and serve with freshly cooked Rice and some vegetables.
