This is a life saving dish that can be prepared quickly and absolutely easily, yet it is delicious. What you have to do is to place everything in a large frying pan OR pot and cook until the sauce thickens. You don’t need to do anything really. While Chicken is cooking, you can do other thing. A lot of Vinegar is used but it is necessary. DO NOT reduce the amount.

Ingredients
800g Chicken Thigh Fillets *cut into chunky bite-size pieces
1 Spring Onion *optional, finely chopped
Sauce
1 clove Garlic *finely chopped
1 small piece Ginger *cut into fine strips OR grated
1/2 teaspoon Chilli Flakes *OR Toban Djan (Chilli Bean Sauce) as required
1/4 cup Soy Sauce
1/4 cup Rice Vinegar
1/4 cup Water
Method
- Place all the Sauce ingredients in a large frying pan OR pot, and bring to the boil over medium high heat.
- Add Chicken pieces to the simmering sauce, cover with a lid, and cook for 10 minutes. Remove the lid, turn over the Chicken pieces so that both sides can be cooked evenly. Keep cooking until the sauce thickens.
- Sprinkle with finely chopped Spring Onion and serve with freshly cooked Rice and some vegetables.
