
Sometimes an accident leads to an invention. Today I found a Sweet Potato in my pantry getting mouldy. I cut off all the bad bits and there was about 160g good bit left. I boiled it to make Kimchi Salad for lunch but I forgot about it. Sweet Potato was over-cooked and too soft for salad. Then I mashed it to make Sweet Potato Pancakes, but I changed my mind and decided to make a dip. I needed a Lemon, then I found two Oranges getting old. I ended up making this sweet paste. It is a beautiful spread which texture is similar to Lemon Curd.
Makes
1 Cupful (250ml)
Ingredients
160g Sweet Potato *after peeled
Salt for cooking
50g Butter
1/4 cup Orange Juice *freshly squeezed juice of Oranges is preferred
3 to 4 tablespoons Sugar *depending on the sweetness and sourness of the Orange Juice
Method
- Peel Sweet Potato and cut into chunky pieces. Cook in salted water until soft. Drain and mash well.
- Add Butter and keep mashing. Add Orange Juice and Sugar, and mix well until smooth. For extra smooth texture, blend it using a stick blender. Store in the fridge. *Note: The paste will become firm when cooled.
