Ukraine’s thin Pancakes are called ‘Mlyntsi’. Similar to France’s Crepes, ‘Mlyntsi’ can be sweet or savoury. I have my own ‘Mlyntsi’ recipe. Today I used Orange Juice instead of Milk, because I wanted to eat ‘Mlyntsi’ with ‘Orange Curd’ that I made a few days ago. The result was fantastic. I want to share how I made these very fragrant and slightly bitter Orange flavoured ‘Mlyntsi’.


Makes

8 x 18cm Pancakes

Ingredients

1 cup Self-Raising Flour *OR Plain Flour
1/4 teaspoon Salt
2 tablespoons Sugar
1 cup Orange Juice
Zest of 1/2 Orange *finely grated
1 large Egg
1 tablespoon Oil OR Melted Butter *Today I used Sunflower Oil
Oil for cooking

Method
  1. Combine Flour, Salt and Sugar in a mixing bowl. Add Orange Juice, Orange Zest, Egg and Oil (OR melted Butter), and use a whisk to mix well until smooth.
  2. Heat a frying pan, non-stick preferred, over medium low heat, lightly oil the pan, ladle the batter, and form a thin pancake in the size of your choice, using the bottom of the ladle to spread the batter if required.
  3. Cook until bubbles appeared on the surface, flip it over, and cook the other side. Serve with your favourite fillings and toppings. *Note: Today I served with Orange Curd.
