Ukraine’s thin Pancakes are called ‘Mlyntsi’. Similar to France’s Crepes, ‘Mlyntsi’ can be sweet or savoury. I have my own ‘Mlyntsi’ recipe. Today I used Orange Juice instead of Milk, because I wanted to eat ‘Mlyntsi’ with ‘Orange Curd’ that I made a few days ago. The result was fantastic. I want to share how I made these very fragrant and slightly bitter Orange flavoured ‘Mlyntsi’.
Makes
8 x 18cm Pancakes
Ingredients
1 cup Self-Raising Flour *OR Plain Flour
1/4 teaspoon Salt
2 tablespoons Sugar
1 cup Orange Juice
Zest of 1/2 Orange *finely grated
1 large Egg
1 tablespoon Oil OR Melted Butter *Today I used Sunflower Oil
Oil for cooking
Method
- Combine Flour, Salt and Sugar in a mixing bowl. Add Orange Juice, Orange Zest, Egg and Oil (OR melted Butter), and use a whisk to mix well until smooth.
- Heat a frying pan, non-stick preferred, over medium low heat, lightly oil the pan, ladle the batter, and form a thin pancake in the size of your choice, using the bottom of the ladle to spread the batter if required.
- Cook until bubbles appeared on the surface, flip it over, and cook the other side. Serve with your favourite fillings and toppings. *Note: Today I served with Orange Curd.
