‘Tamago’ is egg in Japanese. This dish is the chicken-less version of ‘Oyako’ Don. You only need 2 Eggs, 1/4 Onion and cooked rice. It can be prepared so quickly and cheaply, and still quite filling and nutritious. You can add some other vegetables or Asian mushrooms.

Ingredients
1/4 cup Water
1/8 teaspoon Dashi Powder *OR other instant stock powder
1 tablespoon Soy Sauce
1 tablespoon Mirin
1 teaspoon Sugar *optional, only if you like sweeter flavour
1/4 Onion *finely sliced
2 Eggs *lightly whisked
1/2 Spring Onion *finely chopped
Method
- Place Water, Dashi Powder, Soy Sauce and Mirin in a small frying pan (18-20cm), add sliced Onion and bring to the boil over medium heat. Cook until Onion is soft, pour lightly whisked Eggs over but DO NOT stir. Cover with a lid until the egg is cooked as you like it.
- Half fill a bowl with warm Cooked Rice and cover it with the egg mixture. Sprinkle with chopped Spring Onions and enjoy.

I like to top with dried shaved fish, red ginger and Japanese chilli powder and serve with green tea for a great breakfast. Also some sliced fruit on the side

Bianca, thank you for your comment. I admire you and everyone who cook this dish for breakfast. You seem to start your day with a nutritious meal. My breakfast is always a bowl of porridge cooked in the microwave, and I get hungry around 10 o’clock.
