The best way to cook ‘Healthy Tofu & Chicken Balls’ is cooking them in the boiling stock. Today I cooked them in Chicken Stock with Bok Choy and Enoki, and added Harusame Noodles. It was a nutritious and very filling meal but extremely low in calories.
10 Healthy Tofu & Chicken Balls *See ‘Method 1’
600ml Chicken Stock OR Dashi Stock
1 Bok Choy *cut into the size that is easy to eat
Salt *the amount depends on the saltiness of the stock. I added 2/3 teaspoon today
White Pepper to taste
1 teaspoon Soy Sauce
30g Enoki *OR other Asian Mushrooms, e.g. Shiitake
40g Dry Harusame Noodles *thin type
- If you make Tofu & Chicken Balls just for this dish, mix 100g Chicken Breast Mince, 100g Firm Tofu (finely crumbled), 1/4 teaspoon Grated Ginger and 1 Spring Onion (finely chopped). Season with Salt, White Pepper and a little bit of Soy Sauce, and mix to combine.
- Heat Chicken Stock (OR Dashi Stock) in a large saucepan and bring to the boil. Add Tofu & Chicken Balls into the boiling stock and cook until the balls rise to the surface. Then add Bok Choy, bring back to the boil, and cook for a few minutes. Season with Salt, White Pepper and Soy Sauce. Add Enoki and Dry Harusame Noodles, and cook until Harusame Noodles are transparent and soft.
