When I have leftover Tonkatsu (Pork Cutlet), I usually make ‘Katsu Sando’ (Tonkatsu Sandwich) for lunch next day. Today I made this Rice Sandwich ‘Onigirazu’. Tonkastu Sauce can go well with Rice, but Miso Sauce is my choice.

Ingredients

1 serving Cooked Rice *Japanese Short Grain Rice
1 sheet Nori
1/2 or 1 Tonkatsu (Pork Cutlet) *Today I used Oven Baked Tonkatsu.
1/4 to 1/2 Cabbage Leaf *finely sliced

Miso Sauce
1/2 tablespoon Miso *dark colour type
1/2 teaspoon Sugar
1/4 teaspoon Mirin *OR Water
Ground Chilli

Method
  1. Mix Miso, Sugar and Mirin in a small bowl. Add some Ground Chilli if you like it.
  2. Place thin layer of Cooked Short Grain Rice in the centre of Nori sheet, shape it into a square so that it would be easy to wrap. Place finely sliced Cabbage on the Rice.
  3. Spread Miso Sauce on one side of Tonkatsu, and place it on the Cabbage. Cover with another this layer of Rice. Gently press down the layers keeping the square shape. Use a piece of plastic warp to prevent the Rice sticks to your hands.

  4. Fold in a corner and its opposite side corner, then another corner and its opposite side corner to make a square shape. Turn it over, then the moisture will help the corners stick together.
