Italian Pasta are suitable for Japanese flavoured noodle dishes. Japanese Noodles are also suitable for many Italian flavoured pasta dishes. I think Udon Noodles, which are thick and rubbery, are very good with creamy sauces. Today I cooked ‘Spaghetti Carbonara’ replacing Spaghetti with Udon.

Ingredients
40g Pancetta OR Bacon *cut into small pieces
1 teaspoon Olive Oil
1 large Egg
20g Pecorino OR Parmesan Cheese *grated
Black Pepper
1 serving Cooked Udon Noodles *frozen type recommended
Salt to taste
Finely chopped Parsley
Method
- Lightly beat the Egg in a bowl with the grated Cheese, add some freshly ground Black Pepper.
- Heat Cooked Udon Noodles until hot and soft, then drain.
- Heat Olive Oil in a frying pan and cook Pancetta OR Bacon until crispy. Remove excess Oil using paper towel. Add drained Cooked Udon Noodles, stir-fry and lightly season with Salt. Remove from heat, and add the Egg mixture and stir until softly cooked.
- Sprinkle with finely chopped Parsley and extra Pepper, and enjoy.
