In January in Melbourne where I live, shops are full of summer fruits. White Peaches are spacial to me because I grew up in Okayama prefecture, Japan, that produces White Peaches, and it is famous for ‘Momotarō’ (Peach Boy) folktale. Today I made this Granita, a simple summer dessert. If you have sweet and fragrant White Peaches, it is easy to make.

Ingredients

2 White Peaches *about 220g each
1 cup Water
1/4 cup Sugar
1 teaspoon Lemon Juice *plus extra if required

Method
  1. Wash White Peaches well, cut each in half, twist to open, remove stone, then cut into wedges.
  2. Pace Water, Sugar and the wedges of White Peach in a saucepan, bring to the boil, and simmer for 5 to 10 minutes, then cool.
  3. Remove skin and use a stick blender to blend until smooth. This process can be done using a different type of blender. Taste it, and add Lemon Juice as required.
  4. Pour the mixture into a container and leave in the freezer until icy.
  5. Use a fork to break up into crystals and enjoy.
