This is a Passionfruit version of my ‘Super Easy No-Bake Lemon Slice’, but I increased the amount of the biscuit base because I used a larger pan. If you use a smaller pan, slices will become thicker. You may wish to use ‘Super Easy No-Bake Lemon Slice’ recipe for the biscuit base. This is a suer easy recipe. Even young children can make it.

Ingredients

250g Plain Sweet Biscuits *I used Marie Biscuits
1 cup Desiccated Coconut
125g Butter *cut into small cubes
1/2 cup Condensed Milk
1 tablespoon Lemon Juice *plus extra if required

Passionfruit Icing
1 & 1/2 cups (180g) Icing Sugar
30g Butter *melted
2 tablespoons Passionfruit Pulp *plus extra

Method
  1. Line a rectangle OR square cake tin with baking paper. I used 34cm x 20cm Brownie Pan. *Note: For the biscuit base for a smaller size tin, you may prefer ‘Super Easy No-Bake Lemon Slice’ recipe.
  2. Crush OR process Plain Sweet Biscuits into fine crumbs. I used a tough plastic bag and a rolling pin. If there are some larger pieces in the crumbs, that’s OK. Mix with Desiccated Coconut in a mixing bowl.
  3. Place Butter, Condensed Milk and Lemon Juice in a saucepan, heat over low heat, and stir until Butter is melted and smooth. *Note: This process can be done using microwave.
  4. Add the Butter mixture to the crushed Biscuits, and mix to combine. If it is too dry, add a small amount of extra Lemon Juice. Place in the prepared cake tin, spread evenly, and press firmly.
  5. To make Passionfruit Icing, place all ingredients in a bowl and mix well. Then add an extra small amount of Passionfruit Pulp and make it soft and smooth, so that you can spread it easily. *Note: If it became too soft, add extra Icing Sugar.
  6. Spread the Icing on the biscuit base and leave it in the fridge until firm. When the Icing is firm, cut into desired size. Today I cut into 24 pieces.
