Somen

Somen are the thinnest Japanese noodles. It is easy to over cook. Follow the instruction. Standard cooking time is 2 minutes. Somen might be difficult to find for you. You can use Rice Vermicelli or Capellini (Angel Hair Pasta) instead.

Ingredients

4 servings Somen Noodles *OR Rice Vermicelli or Capellini (Angel Hair Pasta)
Mentsuyu (Dipping Sauce)
‘Yakumi’ (Condiments)
*Note: ‘Yakumi’ is herbs and spices to add extra flavours to the dipping sauce. You can add any of the following.
Spring Onion, Toasted Sesame Seeds, Grated Ginger, Shredded Nori, Wasabi, Chilli Powder, Shiso, Myoga, etc.

Method
  1. Cook Somen Noodles as instructed. You don’t need to add Salt to the water as Somen Noodles are salted.
  2. When noodles are cooked, drain and rinse well in COLD water, and place the noodles in a serving bowl with cold water and some Ice Cubes.
  3. Serve the noodles with the chilled ‘Mentsuyu’ dipping sauce and Yakumi.
  4. *Note: Fried food goes well with this noodle dish. Tempura and ‘Kakiage’ Tempura are excellent. ‘Chilled Eggplant’ is delicious.
