I am writing this recipe for my children. This is how your mother cooks her ‘Mashed Potatoes’. It’s easy to cook and essential to know how. Some people add more Butter or Cream to it. Sometimes you can add, or replace some Potatoes with, Broccoli, Peas, Sweet Potatoes, Pumpkin, Carrot, etc. to create different coloured & flavoured mashes.

Ingredients

4 Potatoes *about 800g, cut to small pieces
1 teaspoon Salt for cooking Potatoes
20g Butter
1/2 cup Milk *depends on the amount & dryness of Potatoes
Salt & White Pepper

Method
  1. Place Potatoes in a pot or large saucepan and cover with COLD water. Add Salt and cook until soft. Try over-cook them slightly whenever you cook mashes.
  2. Drain and return to the pot. Add Butter and mash, season with Salt & White Pepper if required, then add Milk and keep mashing until smooth.
