The main ingredients of this soup are Onion, Potato and Seafood. I often use Frozen Seafood Mix. You might wish to add other ingredients such as Celery, Carrot, Corn Kernels, Peas, etc. This soup is much easier to cook than it looks. It is an absolutely comforting, filling and delicious soup. Enjoy with crusty bread.

Ingredients

1/2 Onion *cut into small pieces
1 Potatoes *peeled and cut into small cubes
20g Butter
2 tablespoons Plain Flour
1 cup Chicken Stock *OR Stock of your choice
1 cup Milk
300 to 400g Seafood Mix *thawed if frozen
*Note: Fish, Prawns, Squid, Scallops, etc.
Salt & Pepper
Finely chopped Parsley

Method
  1. Melt Butter in a saucepan over medium low heat, cook Onion and Potato until almost soft. *Note: I cover with a lid for a while, and stir, then cover again, and stir. I repeat this process until almost soft.
  2. Add Plain Flour, stir to combine, then add Stock and Milk, and bring to the boil, stirring.
  3. Add Seafood and cook until cooked. Season with Salt and Pepper.
  4. Sprinkle with some finely chopped Parsley and extra Pepper if you like, and enjoy.
