
As I am getting old, I have more time to spend on cooking, but I tend to seek for a quicker and easier way to cook a dish. Today I was cooking Fish Pie, that is one of my family’s favourite winter dishes. It is not difficult to cook, but a lot of work is required. I just didn’t want to do the Mashed Potato part. So I mixed boiled Potato pieces with the filling, covered with Cheese, and baked it. This is the result. Same ingredients. Quicker and easier. And tastes great!!!

Ingredients
2 Potatoes *about 400g
Salt for cooking
500g Fish Fillets *Both Red-meat Fish & White-meat Fish recommended
*Note: Today I use Salmon & Cod.
1 Onion *cut into small pieces
1 clove Garlic *finely chopped
1 Bay Leaf
2 cups Milk
1/3 cup Frozen Peas
50g Butter
4 tablespoons Plain Flour
Salt & Pepper
1 cup shredded OR grated Cheese of your choice *I used Cheese Mix for Baking
Method
- Season Fish Fillets with Salt & Pepper.
- Peel Potatoes, cut into bite-size pieces, and cook in salted water until soft. Drain when cooked.
- Place Onion, Garlic, Bay Leaf and Fish Fillets in a deep frying pan or a pot. Pour the Milk and heat over a medium low heat, cover with lid, and simmer until Fish Fillets are cooked. *Note: You can precook Onion and Garlic with a little Oil if you wish to do so.
- Transfer Fish Fillets to a plate. When cool enough to handle, remove skin and bones, and break into bite-sized pieces.
- Place Butter in a heat-proof bowl, melt in the microwave, stir in Flour, and mix well. This process can be done using a saucepan. Add it to the Milk mixture in the pan, and cook, string well, until thickened. Season with Salt and Pepper.
- Add the Fish pieces, Frozen Peas and the drained Potato pieces, and gently combine. Spoon the mixture into a baking dish, cover with Cheese, and bake in the oven at 220℃ for 15 minutes OR until nicely browned.
