
I had some left over Semi Dried Tomatoes. Today I used them to make this Creamy Soup that I have been craving for a few days. It is silky smooth and very creamy, but you don’t need Flour OR any dairy. The soup is creamy because of Potato. Absolutely simple and easy to cook. Enjoy with crusty bread.

Ingredients
120 to 150g Semi-Dried Tomatoes *most likely marinated in Olive Oil with some Herbs
1 tablespoon Olive Oil that is marinating Semi Dried Tomatoes
1/2 to 1 Onion *cut into small pieces
1 clove Garlic *crushed
1 Potato *about 200g, peeled and diced
2 cups Chicken Stock *OR Stock of your choice
Salt and Black Pepper
Finely chopped Parsley *OR Herb of your choice
Method
- Cook Onion and Garlic with Olive Oil in a saucepan over medium heat until slightly caramelised. Add Semi Dried Tomato and stir. *Note: If Semi Dried Tomatoes are covered with Herbs, DO NOT remove the Herbs. Add the Herbs as well.
- Add Chicken Stock and Potato, bring to the boil, then simmer until Potato is absolutely soft. Remove from heat, and use stick blender to process the soup until smooth.
- Season with Salt and Black Pepper. Add some finely chopped Parsley (OR Herb of your choice) and enjoy with crusty bread.
