I often make a rice bowl for my lunch, and I most frequently use a small can of Fish to make it. Tuna, Sardines and Salmon are the regulars, but my favourite is Mackerel. Today I seasoned it with Miso and Mayonnaise. I ate it with freshly cooked Rice. Such a quick and easy dish, very nutritious, and absolutely delicious.

Ingredients

1 can (*125g) Mackerel In Brine *drained, broken into bite-size pieces
1/8 to 1/6 Onion *very thinly sliced
1 small piece Ginger *grated, about 1 teaspoonful
1 teaspoon White Miso
1 tablespoon Japanese Mayonnaise
1 serving warm Cooked Rice
Finely chopped Spring Onion
Shichimi (Japanese Chilli Spice Mix)

Method
  1. If Onion is too peppery, rinse under cold water, then drain well.
  2. Combine grated Ginger, White Miso and Japanese Mayonnaise in a small bowl, add Mackerel and Onion, and mix to combine.
  3. Half fill a bowl with warm Cooked Rice and cover it with the Mackerel & Onion mixture. Add some Spring Onion and Shichimi (Japanese Chilli Spice Mix), and enjoy.
