This is one of the dishes I frequently cook for my family and everyone enjoys. When I bought Tomatoes and realised they were not ripe and sour, I most likely cook this dish. You can add extra ingredients such as Tofu, Prawns, Black Fungus, etc. If you added extra ingredients, just add extra Soy Sauce.

2 to 3 Servings

Ingredients

3 Eggs
Salt & White Pepper
1 to 2 Tomatoes *cut into bite-size pieces
1 clove Garlic *finely chopped
Chilli Flakes as required *optional
1 tablespoon Oil *plus extra
1 tablespoon Soy Sauce *alter the amount
1 tablespoon Sake (Rice Wine)
Finely chopped Spring Onion *optional

Method
  1. In a bowl, beat Eggs and lightly season with Salt and White Pepper.
  2. Heat Oil in a frying pan over medium-high heat. When the pan is hot, cook the Egg gently stirring until set but still soft. Transfer to a plate.
  3. Add extra Oil as required, cook Garlic and Tomatoes. You can add some Chilli Flakes if you like. When Tomatoes started softening and juice is coming out, add Soy Sauce and Sake. *Note: 1 pinch Sugar can be added if Tomatoes are sour.
  4. Stir until the sauce is slightly thickened, return the Egg, and gently combine. It is a good idea to add some finely chopped Spring Onion on top when you serve.
