
I was a very busy mother when my children were young, and dinner needed to be quick & easy to prepare, and nutritious. This life-saving dish is so easy to prepare and my children loved it always. I used to cook it very often. Today I cooked it just for myself using ‘Very Versatile Cooked Mince & Onion’. Ingredients
125g Beef Mince
1/4 Onion *finely chopped
*Note: You can use 1 serving (about 140g) ‘Very Versatile Cooked Mince & Onion’
1 small clove Garlic *finely chopped
1 teaspoon Olive Oil
1/2 cup chopped Vegetables of your choice
*e.g. Carrot, Green Beans, Capsicum, Cauliflower, Mushrooms, Peas, Corn, Cabbage, etc.
1/2 can (200g) Diced Tomatoes OR Cushed Tomatoes
1/2 cup Beef Stock
1/2 teaspoon Italian Herb Mix
1/4 cup Uncooked Macaroni
Salt & Pepper
Parmesan Cheese *optional
Method
- Heat Olive Oil in a saucepan over medium heat, cook Garlic and Vegetables. When half cooked, add Beef (OR ‘Very Versatile Cooked Mince & Onion’).
- Add Tomatoes, Beef Stock and Herb Mix, and bring to the boil. Add Uncooked Macaroni and cook, stirring occasionally, for 10 minutes or until Macaroni are soft. Season with Salt & Pepper.
- Add some grated Parmesan on top and enjoy. I added some extra grated Black Pepper as well.
