
There are many different names for this type of sweet confections. This ‘Almond Flake Praline’ is very similar to my ‘Almond Toffee’. You don’t need to add Butter, but I add a small amount for a flavour. It is quite quick and easy to make, and this Praline turns a very ordinary ice cream into a special dessert.

Ingredients
1/2 cup Caster Sugar
2 tablespoons Water
1 teaspoon (5g) Butter *optional
1 cup (about 100g) Almond Flakes
Method
- Spread Almond Flakes on a baking tray and bake in the oven at 180℃ for 5 minutes OR until slightly browned. Set aside and cool.
- Line a baking tray OR a large plate with baking paper. You will pour the hot mixture over the baking paper later.
- Place Sugar and Water (and Butter if you add it) in a frying pan. Bring to the boil over medium heat, and cook without stirring. The mixture that is foaming up starts to change colour to golden, then darker. Lower the heat if you prefer.
- Add Almond Flakes before it turns to the desired colour, quickly mix to combine, then thinly spread the mixture on the prepared tray. *Note: You need to work quickly.
- The mixture hardens as it cools. When completely cooled, break into smaller pieces and enjoy. It can be a great topping for Ice Cream.
*Note: Soak the frying pan in hot water, so that it can be easily cleaned.
