When my children were young, I used to make ‘Muesli Bars’ regularly, but I haven’t make them for a long time. Today I wanted to use up 1 Banana that was almost blackened. I made this slice that is identical to the ‘No Sugar Muesli Bars’. This is a healthy and yummy snack.


Makes

16 Slices *I used 20cm Square Tin

Ingredients

1 Ripe Banana *mashed
1 tablespoon Honey, Maple Syrup, Golden Syrup, etc.
1 tablespoon Oil *e.g. melted Coconut Oil
1 large Egg
1 pinch Salt
2 cups Rolled Oats *reduce the amount if Banana is small
1/2 cup Nuts & Seeds *coarsely chopped if large
1/2 cup Dried Fruit *coarsely chopped if large
*e.g. Almonds, Pepitas (Pumpkin Seeds), Sunflower Seeds, Sultanas, Currants, Raisins, Cranberries, Apricots, Coconut, etc.

Method
  1. Preheat oven to 180°C. Line the base of a 20cm to 22cm square cake tin with baking paper.
  2. Combine all ingredients well. Place the mixture in the prepared cake tin, spread evenly, then press down firmly.
  3. Bake for 20 to 25 minutes OR until nicely browned. Cool completely and cut into 4-5cm squares.
