If you are looking for a recipe of Almond Cream to make Almond Tart, Almond Croissant OR other Almond desserts, here is my advice. Almond Cream can be made with a same weight of Butter, Sugar, Egg(s) and Almond Meal. That’s the recipe that I have been using for decades. It’s easy to remember. If an Egg weighs about 50g, add 50g of each Butter, Sugar and Almond Meal. Of course, you can reduce the amount of Butter OR Sugar to suit your preference.
Ingredients
*Note: You need about same weight of all ingredients. You may wish to reduce the amount of Butter OR Sugar, OR add extra Almond Meal.
50g Butter *softened
50g (about 1/4 cup) Caster Sugar
1 Egg *about 50g
50g (about 1/2 cup) Almond Meal
Method
- Whisk softened Butter and Sugar until creamy. Add Egg(s), one at a time if you add more than one, and whisk well. Then add Almond Meal and mix well.
- *Note: You may wish to reduce the amount of Butter OR Sugar, OR add extra Almond Meal.
