Super quick and easy and delicious and nutritious! Great with freshly cooked rice or pasta. Using the ready-to-serve Baby Spinach, this dish can be prepared so quickly.

Ingredients
300g Scallops
1 bunch Spinach *OR plenty of ready-to-serve Baby Spinach
20 to 30g Butter
1 clove Garlic *finely chopped
1 to 2 tablespoons Soy Sauce
Method
- Wash Spinach well and cut about 3cm in length.
- Heat Butter in a frying pan and cook Garlic and Scallops until golden on both sides, then add Spinach.
- When Spinach is cooked, add Soy Sauce. Serve with freshly cooked hot rice or mix with freshly cooked pasta.
- *Tip: You can add some Chilli as well if you like it spicy.
