
This is a very filling soup because there is a lot of Cabbage in it. I added thinly sliced Pork and Corn Kernels today. You may wish to add more Vegetables OR Mushrooms. For me, this can be a meal as it is, but you can add some Rice OR Noodles. The soup doesn’t look great, but it is a comforting soup.

Ingredients
1 teaspoon Oil
100g Cabbage *thinly sliced, add as much as you like
100g thinly sliced Pork *cut into bite-size pieces
1 small clove Garlic *finely chopped OR grated
1/2 teaspoon grated Ginger
1 teaspoon Curry Powder
1 cup Chicken Stock *OR 1 cup Water and 1 teaspoon Asian Chicken Bouillon Powder
1/4 cup Corn Kernels *frozen is OK
1 teaspoon Soy Sauce
Salt as required
Finely chopped Spring Onion
Method
- Heat Oil in a saucepan over medium heat, add Cabbage, Garlic and Ginger, stir, add Pork, and stir until Pork is cooked. It won’t take long.
- Add Curry Powder, stir, add Chicken Stock and Corn Kernels, and bring to the boil. Cook for a few minutes OR until Cabbage is soft. Add Soy Sauce, taste it, then add some Salt if required.
- Sprinkle with some finely chopped Spring Onion, and enjoy.
