This is a very filling soup because there is a lot of Cabbage in it. I added thinly sliced Pork and Corn Kernels today. You may wish to add more Vegetables OR Mushrooms. For me, this can be a meal as it is, but you can add some Rice OR Noodles. The soup doesn’t look great, but it is a comforting soup.

Ingredients

1 teaspoon Oil
100g Cabbage *thinly sliced, add as much as you like
100g thinly sliced Pork *cut into bite-size pieces
1 small clove Garlic *finely chopped OR grated
1/2 teaspoon grated Ginger
1 teaspoon Curry Powder
1 cup Chicken Stock *OR 1 cup Water and 1 teaspoon Asian Chicken Bouillon Powder
1/4 cup Corn Kernels *frozen is OK
1 teaspoon Soy Sauce
Salt as required
Finely chopped Spring Onion

Method
  1. Heat Oil in a saucepan over medium heat, add Cabbage, Garlic and Ginger, stir, add Pork, and stir until Pork is cooked. It won’t take long.
  2. Add Curry Powder, stir, add Chicken Stock and Corn Kernels, and bring to the boil. Cook for a few minutes OR until Cabbage is soft. Add Soy Sauce, taste it, then add some Salt if required.
  3. Sprinkle with some finely chopped Spring Onion, and enjoy.
