Beans are not expensive and nutritious. As food prices soar, it might be a good idea to start eating more Beans. This is a super simple salad of Beans. I added a small can of Tuna as well. Chickpeas and other Beans can be used, but I used Cannellini (White Beans). You may wish to cook Dry Cannellini as it would be even cheaper to make this salad, but we need to think about cooking time, the cost of gas and electricity. I think Canned Beans are convenient.

Makes

4 Servings

Ingredients

1 can (400g) Cannellini (White Beans)
1 can (95g) Tuna
1/4 Red Onion *finely chopped
2 tablespoons chopped Parsley
Salt & Black Pepper to taste
2 tablespoons White Wine Vinegar
2 tablespoons Olive Oil

Method
  1. Drain canned Cannellini (White Beans), rinse under cold water, then drain well.
  2. Drain canned Tuna and place in a mixing bowl. Add other ingredients and mix to combine. The amount of Salt depends on the saltiness of Tuna and your preference. *Note: If you use Tuna in Olive Oil, you don’t need to drain. You probably don’t need to add Oil.
  3. Add drained Cannellini and gently combine.
