This is my favourite salad recently and I have been making it frequently. Today I made it again. As soon as my husband saw it, he slouched to show his disappointment, and I heard him muttering ‘Again?’ Well, I think it is delicious and nutritious, it is so easy for me to make, and it is good for him to eat. He doesn’t like Beans and Peas. He likes Meat.


Makes

2 to 4 Servings

Ingredients

1/2 Continental Cucumber *about 130g
1/2 Carrot *crunchy fresh Carrot!
1/8 Red Onion *finely chopped
1 can (95g) Tuna *I used Tuna in Springwater, drained
1/4 teaspoon Salt *reduce it if Tuna is salty
Black Pepper as required
3-4 tablespoons Japanese Mayonnaise
1/2 teaspoon Soy Sauce *alter the amount to suit your taste
1 can (400g) Chickpeas *rinsed and drained
8 Cherry Tomatoes OR Grape Tomatoes

Method
  1. Cut Cucumber and Carrot into small pieces, and place in a mixing bowl. Add finely chopped Onion, drained Tuna, Salt and Black Pepper, and mix to combine.
  2. Add Japanese Mayonnaise and Soy Sauce, and mix well. Drain Chickpeas, Rinse under water, and add to the mixing bowl. Lastly add Tomatoes, and mix to combine.
