Rum Raisins go very well with Cream Cheese as we know Cheesecake with Rum Raisins is delicious. It is good to have a jar of Rum-Steeped Raisins OR Sultanas in the pantry for always. Today I added some Rum-Steeped Sultanas to Cream Cheese Cupcakes. It couldn’t go wrong, could it? Of course cupcakes were delicious. I only regretted that I should have added more Rum-Steeped Raisins OR Sultanas. Please note that these cupcakes are for grown-ups only.

Ingredients

250g Cream Cheese *cut into small pieces and softened
60g Butter *softened
1/2 cup Caster Sugar
1-2 tablespoons Lemon Juice
2 Eggs *room temperature
1 & 1/2 cups Self-Raising Flour
1/3 cup Milk *You can add extra 1-2 tablespoons if required
1/4 cup Rum-Steeped Sultanas OR Raisins *add more if you like

Method
  1. Preheat oven to 180℃. Line a 12-hole medium-size muffin tin with paper cases.
  2. Beat softened Cream Cheese and Butter in a mixing bowl with a whisk until smooth. Add Sugar and Lemon Juice, and beat until creamy.
  3. Add Eggs, one at a time, beating well after each addition. Fold in Flour with a spatula or a large metal spoon, add Milk and Rum-Steeped Sultanas (OR Raisins), and mix until just combined. DO NOT over-mix.
  4. Spoon the mixture into paper cases. Bake for 20 to 25 minutes or until golden and cooked through. Leave in tins for 5 minutes before moving onto a wire rack to cool.
