
It doesn’t happen often as I am quite good at using up Vegetables. However, today I found a head of Broccoli that was in an opaque plastic bag and it had turned yellow. I always cook this soup when I find Broccoli that turned yellow. This is a simple recipe but it is a great recipe to enjoy such Broccoli that is not so great anymore.
Makes
2 to 4 Servings
Ingredients
1 head Broccoli that turned yellow *cut into small florets
*Note: Stem can be used for the soup, but I used it for ‘Mock Zha Cai’
1 Onion *thinly sliced
2 cups Vegetable Stock OR Chicken Stock *OR 2 cups Water and 1 Stock Cube
1/2 cup Rolled Oats
1/2 cup Milk
Salt & White Pepper
Method
- Place Broccoli and Onion in a large Saucepan OR Pot. Add Vegetable Stock (OR Chicken Stock), cover with a lid, and cook over medium low heat until soft.
- Use a stick Blender to blend until smooth. Add Rolled Oats and Milk, and bring back to the simmer, stirring frequently. Season with Salt & White Pepper. When the Oats are soft, the soup is done.

I just made your soup, it was delicious! I found it searching to see if yellowed broccoli was safe to eat.
The oatmeal made a great texture and thickened the soup easily, rather than the traditional making a rue, white sauce to thicken it.
For those nay Sayers, have you ever had beef barley soup? That’s a grain like oatmeal.
I did add some celery. If you cook cruciferous vegetables, like broccoli, cabbage with celery it keeps the smell down and mellows it a little. Plus I love celery in soups. Hi Margaret. Thank you for posting your comment. I love Barley. As Barley takes longer to cook, I often cook a large amount of Barley until ‘al dente’, and freeze the cooked Barley in small bags, so that I can add Barley to any types of soups. I love Celery, too. But, my husband and son are the problem. They have a skill to remove small pieces of Celery from whatever they are in!

It’s interesting to find someone who leave this kind of opinion on my website. Does ‘Yuck!!!’ mean you don’t like Oats? You don’t need to add them. The main point of this dish is we still can enjoy Broccoli that turned yellow, and this is one suggestion.

Oishi! I added a little garlic for my grandson who loves garlic and used coach’s oats for the thickening, because that’s all we have Thank you! I got your recipe when I asked “what can I make with yellowing broccoli?”, because my broccoli-loving grandson didn’t like the color. The perfect solution!

I will…I already looked😃! I’m going to try them too. I also liked your tofu recipes. The garlic grandson says he’s a pescatarian and I want to make sure he gets more protein, especially at breakfast. He doesn’t like eggs. Thank you again!
