I wanted to use Octopus for this dish, but It’s just too difficult to find large Octopus where I live. I decided to use Cooked Prawns. You can use Squid, Scallops OR Fish Balls instead. Using my Kimchi Flavoured Sauce, this salad can be made instantly.

Ingredients
1 Cucumber *cut into bite-size pieces
100g shelled Cooked Prawns
1-2 tablespoons Kimchi Flavoured Sauce
Method
- Shell and clean Cooked Prawns. If you use frozen shelled uncooked Prawns, thaw them completely and leave them at room temperature for a while, then cook in boiling salted water in a saucepan avoiding over-cooking. Then drain, cool in cold water, then drain well.
- Combine all the ingredients.
- *Note: A small amount of Sesame Oil can be a good addition.
