This salad is my accidental invention. I was making a salad of Daikon & Rocket using my ‘Creamy Sesame Dressing’. The accidental part was that I had a piece of Parmesan cheese in my mouth when I tasted the salad. ‘Wow! It tastes good with Parmesan!’ Then I added some shaved Parmesan to the salad. That’s how the recipe was created.

Ingredients
1 medium size Daikon
2 to 3 handfuls Rockets
Parmesan Cheese
Salt
Creamy Sesame Dressing
2 tablespoons Toasted Sesame Seeds *ground
2 to 3 tablespoons Japanese Mayonnaise
1 tablespoon Soy Sauce
1 clove Garlic *grated
1/2 to 1 tablespoon Rice Vinegar
Method
- Slice Daikon into thin strips, using a vegetable slicer if you have one. Add a pinch of Salt and give a gentle massage.
- Chop up Rockets about 1cm. Make Creamy Sesame Dressing by mixing all ingredients.
- Combine Daikon, Rockets and the dressing, then scatter with shaved Parmesan.
