‘Katsu Don’ is a very popular Japanese rice bowl dish, and ‘Tonkatsu’ (Pork Cutlet) is often used. This is a Fish version. Crumbed Fried Fish OR Battered Fried Fish are both suitable. If you have some leftovers, try this delicious rice bowl for a quick & easy meal.

Ingredients
1/4 cup Dashi Stock OR Stock of your choice *OR Water
1 tablespoon Soy Sauce
1 tablespoon Mirin
1/2 teaspoon Sugar *alter the amount to suit your taste
1/4 Onion *sliced
1 Crumbed OR Battered Fried Fish *about 120 to 150g, cut into bite-size pieces
1/2 Spring Onion *diagonally sliced
1 large Egg *whisked
1 serving cooked Rice *warmed
Method
- Place Dashi Stock (OR Stock of your choice), Soy Sauce, Mirin and Sugar in a small frying pan or small saucepan. Scatter Onion, cover with a lid, and bring to the simmer over medium low heat.
- When Onion is soft, arrange Fried Fish pieces, scatter Spring Onion, pour whisked Egg evenly, cover with the lid, and cook until Egg is softly cooked.
- Half fill a bowl with warm cooked Rice, cover with the mixture, and enjoy.
