This dessert is super easy to make and everyone would love it. It is best when softly frozen, but you can enjoy it unfrozen just like a mousse. Freeze it in a large container OR individual serving glasses.

You may wish to increase the amount of Sugar as 2 tablespoons seems too small, but you need to be careful. Fruit Conserve is very sweet. Some Sweet Biscuits are also very sweet. Today the amount of Sugar could be less than 2 tablespoons.

Ingredients

125g Cream Cheese *softened
4 tablespoons Unsweetened Greek Yoghurt
2 teaspoons Lemon Juice
2 tablespoons Caster Sugar
1/2 cup Thickened Cream *whipped
3 to 4 tablespoons Fruit Conserve *e.g. Cherry Jam, Berry Jam, Marmalade, etc. Today I used Blueberry Conserve.
4 Sweet Biscuits *e.g. Shortbread, Choc Ripple, etc.

Method
  1. Place softened Cream Cheese, Yoghurt, Lemon Juice and Caster Sugar in a bowl, and use a whisk to beat until smooth. Add softly whipped Cream and combine well.
  2. Coarsely break the Sweet Biscuits, add to the bowl, and mix to combine. Then add Fruit Conserve and roughly mix.
  3. Spoon the mixture into a large container or individual serving glasses, then place in the freezer until softly frozen. It won’t take long.
