Garlic Chives and Eggs are a great match. They taste so good whatever way they are cooked. ‘Stir-fried Garlic Chives & Eggs’ and ‘Garlic Chives & Egg Spaghetti’ are the examples. This simple soup is no exception. It is absolutely easy to cook, not expensive at all, and delicious and nutritious.

1000ml Chicken Stock *OR Stock of your choice
100g Garlic Chives *cut into 3cm pieces
1 to 2 tablespoons Soy Sauce
Salt & White Pepper
2 tablespoons Potato Starch OR Corn Starch *mixed with 2-3 tablespoons Water
2 Eggs *whisked

  1. Heat Stock in a large saucepan or pot and bring to the boil. Add Garlic Chives, which will be cooked quickly. Season with Soy Sauce and Salt & White Pepper to suit your taste.
  2. Add Potato Starch mixture and stir. When soup is thickened, gradually add whisked Eggs, and stir until softly cooked.
  3. *Note: Asian Mushrooms such as Shiitake or Enoki can be a good addition to this soup.
