I often make a rice bowl dish using a small can of Sardines for my lunch. I have shared some recipes on this website and all of them are quick and easy to make. This one is not too quick because you need to wash Choy Sum and cut it. Still this rice bowl can be made in five minutes. I use Choy Sum because I like it, but you can use other Asian green leafy vegetables such as Bok Choy.

Ingredients

1 can (*110g) Sardines in Springwater *drained
80g Choy Sum *OR other green leafy vegetable, e.g. Bok Choy
1/2 teaspoon Sesame Oil
1 tablespoon Sake (Rice Wine) *OR Mirin for slightly sweeter flavour
1 tablespoon Soy Sauce
1 small clove Garlic *finely chopped
Chilli Flakes *optional, as required
1 serving warm Cooked Rice
Finely chopped Spring Onion
Toasted Sesame Seeds
Shichimi (Japanese Chilli Spice Mix) OR Ground Chilli

Method
  1. Drain the can of Sardines. Wash Choy Sum and cut into bite-size pieces.
  2. Place Sesame Oil, Sake (Rice Wine) and Soy Sauce in a small frying pan OR saucepan, add Garlic, Chill Flakes and hard parts of Choy Sum, and heat over medium heat for 1-2 minutes.
  3. Add green soft parts of Choy Sum, stir, then add drained Sardines, and gently combine.
  4. Half fill a bowl with warm Cooked Rice and cover it with the mixture, add some finely chopped Spring Onion and Toasted Sesame Seeds on top. I also added Shichimi (Japanese Chilli Spice Mix).
