How do you cook Brussels Sprouts? Roasting is probably the most popular method, I guess. Pan-frying is also good. I like pan-fried spicy Sprouts. I would cook with Bacon or Pancetta. Today, I am sharing a Japanese recipe, that is ‘Gomamiso-ae’. ‘Gomamiso-ae’ Sauce is similar to ‘Goma-ae’ Sauce. As you can see, it has ‘Miso’ in it. The sauce is thicker and richer, and surprisingly good with Sprouts.

Ingredients

300 to 400g Brussels Sprouts
200g Chicken Breast Fillet
Salt
2 to 3 tablespoons Toasted Sesame Seeds *ground
1 tablespoon Miso *white type or red type
1 tablespoon Sugar
1 tablespoon Mirin
2 to 3 teaspoons Soy Sauce *depends on the saltiness of Miso
1 teaspoon grated Ginger

Method
  1. Toast Sesame Seeds and grind until aromatic. Add Miso, Sugar, Mirin, Soy Sauce and Ginger, and mix well to make sauce.
  2. Tear Chicken Breast Fillet into 2 to 3 pieces so that it will cook quickly. Place Chicken in a heat-proof bowl, season lightly with Salt, cover with a plate, and cook for 1 minutes, turn over and cook for 1 more minutes (or less) until cooked. When cool enough, tear into strips.
  3. Clean and trim Brussels Sprouts, and cut them in half. Cook in the boiling salted water until soft. Drain and cool.
  4. Combine Chicken and Brussels Sprouts with the sauce.
