Melbourne, where I live, has a very large Greek population. Actually Greek community of Melbourne is the largest Greek-speaking population outside of Greece and Cyprus. And Greek Food is hugely popular here. This is my Greek Salad that I often make. As I always add salty Fetta and Olives, I season the salad very lightly. This salad is perfect for Aussie BBQ.

Ingredients

2 Lebanese Cucumbers OR 1 Continental Cucumber
2 Tomatoes
1 Green Capsicum
1/4 Red Onion *thinly sliced
3 to 4 tablespoons ‘Greek Salad Dressing’
100g Fetta *cut into small cubes
1/2 cup Kalamata Olives

Greed Salad Dressing
*Note: This amount is probably too much for 4 servings, but it is the easiest measurement.
2 tablespoons Red Wine Vinegar
2 tablespoons Lemon Juice *about 1/2 Lemon
4 tablespoons Olive Oil
1 teaspoon Dried Oregano
1/4 teaspoon Salt
Ground Black Pepper as required

Method
  1. To make Dressing, combine all the Dressing ingredients in a small bowl.
  2. Cut Cucumber, Tomato and Green Capsicum into bite-size pieces, and place in a mixing bowl. Add thinly sliced Red Onion and 3-4 tablespoons Dressing, and mix to combine. *Note: Add extra Dressing as required. You may wish to add extra Dried Oregano.
  3. Add Fetta and Olives, and gently combine.
