A bowl of Sushi Rice covered with fresh Sashimi pieces is called ‘Kaisen Don’ (海鮮丼) in Japan. In Melbourne where I live, it is not something I can eat whenever I want to eat. It is quite expensive at restaurants. If you can get Sashimi, ‘Kaisen Don’ is not difficult to make at home. Today I bought Sashimi and made it to celebrate my 3000th recipe on this website.

Ingredients

Sushi Rice
1 serving (*about 200g) Cooked Japanese Short Grain Rice *must be hot
2 teaspoons Sugar
3 teaspoons Rice Vinegar
1/5 teaspoon Salt

Topping
100g Assorted Sashimi
Wasabi
Soy Sauce to serve *read ‘Method 3’
*Note: You can add extra ingredients such as thinly sliced Cucumber, Shiso, Ikura (Salmon Roe), Nori, etc.

Method
  1. Mix Rice Vinegar, Sugar and Salt in a bowl, that can be a serving bowl. Add hot cooked Short Grain Rice, mix well, then set aside and cool. *Note: If you prepare more than 1 serving, see ‘Sushi Rice’ page.
  2. When the Sushi Rice is cooled, place it in a serving bowl, and decorate with Sashimi and Wasabi (and additional ingredients).
  3. *Note: When you eat this dish, I recommend NOT to pour a lot of Soy Sauce over the Sashimi and toppings, as it would be impossible to enjoy the delicate flavour of Sushi Rice. Mix Wasabi and some Soy Sauce in a small dish, dip a piece of Sashimi in the sauce, then eat it with Sushi Rice.
