Very thinly sliced meat OR fish is called ‘Sukimi’ in Japanese. Sukimi Beef cooked in a sweet sauce is known as ‘Sukiyaki.’ Thinly sliced other meat can be used. Today I tried with Lamb. As I always eat it with rice, I made it into a rice bowl dish. It was absolutely delicious!

Ingredients
100g thinly sliced Lamb *cut into bite-size pieces
1/4 Onion *thinly sliced
50g Asian Mushroom(s) *sliced, I used 1 small King Oyster Mushroom
1 teaspoon Oil
1 serving warm Cooked Rice
1 Egg Yolk *OR 1 softly cooked Whole Egg
Finely chopped Spring Onion
Shichimi (Japanese Chilli Spice Mix) *optional
Sauce
1/2 tablespoon Sugar
1 tablespoon Soy Sauce
1 tablespoon Mirin
1 tablespoon Water
Method
- Combine all the sauce ingredients in a small bowl. Prepare all ingredients before you start cooking.
- Heat Oil in a small frying pan over medium heat, cook Onion for a few minutes. Add Lamb and Mushroom(s), and stir.
- When Lamb changed the colour, it won’t take long, add the sauce, and cook until the sauce thickens.
- Half fill a bowl with warm Cooked Rice and cover it with the Lamb mixture, add Egg Yolk on top, sprinkle with finely chopped Spring Onion and Shichimi (Japanese Chilli Spice Mix), and enjoy.
