This might be a new way to eat Lamb for you. It is a very simple stir-fry dish. As I always eat it with Rice, I made it into a rice bowl. This stir-fry is absolutely easy. Make the marinade in a mixing bowl, add all ingredients and mix to combine, then stir-fry. Of course, Lamb can be replaced with other meat.

Ingredients

200 to 250g thinly sliced Lamb *cut into bite-size pieces
1/2 Onion *thinly sliced
1 small Carrot *cut into thin strips
1 medium King Oyster Mushroom *sliced
*Note: You can use other Asian Mushrooms, e.g. Shiitake
Finely chopped Spring Onion
Toasted Sesame Seeds

Marinade
1 clove Garlic *grated
1 small piece Ginger *grated
1 tablespoon Sugar
2 tablespoons Soy Sauce
1/2 tablespoon Sesame Oil
Chilli Flakes, Chilli Paste, etc. *optional, as required

Method
  1. Combine all the Marinade ingredients in a mixing bowl.
  2. Add Lamb and Vegetables to the Marinade, and mix to combine. Set aside for 10 to 15 minutes.
  3. Heat a frying pan or wok over high heat, add everything in the mixing bowl to the pan, and stir-fry until everything is cooked.
  4. Half fill a bowl with warm Cooked Rice and cover it with the mixture. Sprinkle with some finely chopped Spring Onion and Toasted Sesame Seeds, and enjoy.
