Our lovely next-door neighbours are enthusiastic gardeners and they grow Vegetables and Fruit. They are very kind to share their harvests with us. A large bagful of Lemons are challenge for me to consume. Today I used 4 Lemons to make this Lemon Curd.


About 400ml


2 Eggs
2 Egg Yolks
3/4 cup Caster Sugar *OR 1 cup for sweeter curd
100g Butter *cut into small cubes
1/2 cup Lemon Juice *You would need 3-4 Lemons
Zest of 1 Lemon *finely grated

  1. Whisk Eggs and Egg Yolks with Sugar in a saucepan until smooth. Add Butter, Lemon Juice and finely grated Zest, and whisk over low heat until the mixture thickens.
  2. Transfer to sterilised jars and store in the fridge.
