Canned Beans are very handy to stock in the pantry. Using them, a nice salad like this one can be made very easily. You may wish to cook Lentils by yourself as it doesn’t take long to cook them. I still enjoy using Canned Lentils. Today I used Cucumber, Grape Tomatoes, Carrot, Red Capsicum and Onion. Naturally, you can use whatever salad vegetables you have in hand. Lettuce and other leafy vegetables such as Rocket would be nice.
1/4 to 1/2 Red Onion *finely chopped
2 cupfuls chopped Salad Vegetables
*Note: Today I used Cucumber, Grape Tomatoes, Carrot and Red Capsicum.
1 can (400g) Lentils *drained and rinsed
1 tablespoon finely chopped Parsley
1 clove Garlic *optional, grated
3 tablespoons Olive Oil
1 tablespoon Lemon Juice
1 teaspoon Dijon Mustard *OR Mustard of your choice
1/4 teaspoon Salt
1/4 teaspoon Sugar
- In a large mixing bowl, combine all the Dressing ingredients.
- Prepare Vegetables. Finely chop up Onion and cut all other Vegetables into small pieces. Add to the dressing in the mixing bowl and mix to combine.
- Add drained Lentils and mix well. I recommend to leave it in the fridge for 30 minutes.
- Before you serve, add crumbled Fetta and finely chopped parsley, and mix to combine. Add extra Salt & Pepper if required. *Note: I scattered with some Fetta on top and sprinkled with extra Black Pepper.
