I wonder how many times I have cooked this dish. When my children were young, my husband was frequently away from home and I was like a single parent. After a terribly busy every day, dinner needed to be quick, easy and nutritious. This life-saver dish is so easy to prepare and my children loved it always.

Ingredients

500g Beef Mince
1 tablespoon Olive Oil
1 Onion *finely chopped
1 clove Garlic *finely chopped
1 cupful of chopped Vegetables of your choice
*e.g. Carrot, Mushrooms, Green Beans, Capsicum, Peas, Corn, etc.
1 can (400g) Diced Tomatoes
2 cups Beef Stock
1 tablespoon Italian Herb Mix
1 cup Uncooked Macaroni *You can add more if you like.
Salt & Pepper
Parmesan Cheese

Method
  1. Heat Olive Oil in a pot, cook Garlic and Onion, add Beef. When Beef changes colour, add other vegetables and cook for a few minutes.
  2. Add Tomatoes, Beef Stock and Herb Mix, and bring to the boil. Add Uncooked Macaroni and cook, stirring occasionally, for 10 minutes or until Macaroni are cooked. Season with Salt & Pepper.
  3. Sprinkle with chopped Parsley and Parmesan, and serve.
