I wonder how many times I have cooked this dish. When my children were young, my husband was frequently away from home and I was like a single parent. After a terribly busy every day, dinner needed to be quick, easy and nutritious. This life-saver dish is so easy to prepare and my children loved it always.

Ingredients
500g Beef Mince
1 tablespoon Olive Oil
1 Onion *finely chopped
1 clove Garlic *finely chopped
1 cupful of chopped Vegetables of your choice
*e.g. Carrot, Mushrooms, Green Beans, Capsicum, Peas, Corn, etc.
1 can (400g) Diced Tomatoes
2 cups Beef Stock
1 tablespoon Italian Herb Mix
1 cup Uncooked Macaroni *You can add more if you like.
Salt & Pepper
Parmesan Cheese
Method
- Heat Olive Oil in a pot, cook Garlic and Onion, add Beef. When Beef changes colour, add other vegetables and cook for a few minutes.
- Add Tomatoes, Beef Stock and Herb Mix, and bring to the boil. Add Uncooked Macaroni and cook, stirring occasionally, for 10 minutes or until Macaroni are cooked. Season with Salt & Pepper.
- Sprinkle with chopped Parsley and Parmesan, and serve.
