My ‘Sweet Miso Eggplant Don’ is usually made with Pork Mince, but it can be made with Chicken Mince, Beef Mince, Tofu OR Canned Tuna. On the other day when I wanted to eat it for lunch but I didn’t bother cooking it just for myself, I did an experiment. I microwaved everything together… Oh, my! It worked! It’s so easy! It’s so yummy!

Ingredients
Eggplant 1 medium *about 300g, cut into small pieces
Canned Tuna in Oil (Canola OR Olive Oil) 1 *about 100g, DO NOT drain
Miso 2 tablespoons
Sugar 1/2 to 1 tablespoon
Mirin 1 tablespoon
Soy Sauce 1/2 tablespoon
Grated Ginger 1 teaspoon
Toasted Sesame Seeds 1/2 tablespoon
Method
- Place all ingredients except Sesame Seeds in a large heat-proof bowl and mix well. Do not discard the Oil in the Tuna as the oil is essential. Adjust the amount of Sugar depending on the flavour and saltiness of Miso you use.
- Cover with a large plate or heat-proof wrap, cook in the microwave on high power for 3 minutes, toss it over and cook for 2 more minutes. Toss over again, carefully because it must be very hot at this stage, and cook 1 more minute. Let them rest for a few minutes so that the remaining heat will cook all through.
- Enjoy it with freshly cooked rice.

I Love using the microwave to cook! Recently discovered cooking broccoli & Japanese white cabbage in the microwave, so easy and tasty!! Eggplant and canned fish sounds so delicious! I will probably also add an egg in the mixture! Thanks for your super easy recipes =)

Thanks for your comment, Gem. But egg in the mixture? I would cook the egg separately and cover the rice with the mixture and place the softly cooked egg on top. It sounds great!!!
