Since I discovered the easiest & the quickest way to cook Eggplant, I am using Microwave for cooking more often. This is an almost identical recipe to ‘Microwaved Eggplant & Tuna (Sweet Miso)’ but in a different flavour. And again, what you have to do is microwaving everything together. Nothing can be easier than this!

Ingredients
Eggplant 1 medium *about 300g, cut into small pieces
Canned Tuna in Oil (Canola OR Olive Oil) 1 *about 100g, DO NOT drain
Sesame Oil for flavour 1 teaspoon *optional
Sugar 1 tablespoon
Mirin 1 tablespoon
Soy Sauce 2 tablespoons
Ginger 1 to 2 teaspoons *grated OR thinly sliced into strips
Chilli Flakes *as required
Method
- Place all ingredients in a large heat-proof bowl and mix well. Do not discard the Oil in the Tuna as the oil is essential.
- Cover with a large plate or heat-proof wrap, cook in the microwave on high power for 3 minutes, toss it over and cook for 2 more minutes. Toss over again, carefully because it must be very hot at this stage, and cook 1 more minute. Let them rest for a few minutes so that the remaining heat will cook all through.
- Enjoy it with freshly cooked rice.

This is wonderful, so quick and easy in the microwave. Have made several times and although lovely with rice, I might try with noodles tonight.
